For the Love of What Endures

This is what happens when two ski bums start a family, take up fishing and decide to make whisky in the Mountains of Colorado. 

Minturn Whisky Co. was founded by husband and wife duo Stef and Spence Neubauer.

 

Spence was a ski patroller with a passion for whisky — specifically single malt Scotch — and a rare ability to taste the difference. Stef was a doctor who knew from day one that something felt wrong, but she stayed, for years, trying to make it work. Over 14 years of dreaming and scheming, they kept asking: “What if we built something together?”

Stef ended up walking away from the career everyone said was the dream, and together they chose something slower, something real.

Minturn is the kind of place you miss before you’ve even left. Tucked between peaks. Full of character. Fiercely independent. And completely overlooked.

We’re developing a first-of-its-kind distillery right in the heart of Minturn — a space that reflects what we believe: that doing things the right way doesn’t have to mean doing them the way they’ve always been done.

The building will feature a closed-loop system that reuses heat to warm the distillery, melt snow on the street, and pre-heat water for future batches. We also plan to capture CO₂ from fermentation and repurpose it for use in local restaurants.

This isn’t a portfolio brand, but a singular obsession.


We only make whisky because it’s the only thing we love enough to do well. That’s the rhythm we live by.  We both gravitate toward doing things the slow and traditional ways. We can be found most evenings sitting and knitting together, listening to music. A sweater takes us each a few months. We love to fish but don’t mind if the action is slow. It is still a day out on the river under the sky.

 

We’re not here to grow at all costs. We’re here to grow the right way — with reverence, restraint and purpose.
